Ingredients:
To prepare the cauliflower:
1 cauliflower
1 teaspoon turmeric powder
1 teaspoon salt
4-5 cups of water
For marination:
1 cup Yogurt
1 teaspoon of red chilli powder
½ teaspoon coriander powder
½ teaspoon cumin powder
½ teaspoon garam masala
1 lime
Pinch of salt & sugar
1 tablespoon of mustard oil
For sides:
Cup of almonds
Milk & cream
1 tablespoon butter
1 cup cranberry
¼ cup wine
1 star anise
1 cinnamon stick
2-3 tablespoons sugar
Preparation:
In 4-5 cups of water, add the turmeric powder & salt to blanch the cauliflower. Mix all ingredients for the marnation together. Once the marination is ready, brush it on top of the cauliflower and bake it at 200 degree celsius for 10-12 minutes.
For the sides, blanch the cup of almonds, pure it with milk, cream and 1 tablespoon of butter. For the cranberry sauce mix all the ingredients and boil for a few minutes. Garnish the cauliflower with a little bit of butter, sprinkle either garam or chaat masala, mint leaves, pomegranate & coriander.
