Mutton Paya Recipe:
To Pressure-Cook:
Mutton Bones (Trotters) - 300 g
Ginger Garlic Paste - 2 tsp
Green Cardamom - 2 nos
Clove - 4 nos
Salt - 1 tsp
Turmeric Powder - ¼ tsp
Red Chilli Powder - ½ tsp
Coriander Powder - ½ tsp
Water - 2 Cups
Coconut Paste
Grated Coconut - ½ Cup
Poppy Seeds - 1 tbsp
Fennel Seeds - 1 tsp
Water - 3 tbsp
Other Ingredients:
Groundnut Oil - ½ Cup
Green Cardamom - 3 nos
Clove - 3 nos
Cinnamon - 2 inches
Star Anise - 1 no
Bay Leaves - 1 no
Onion (thinly sliced) - 2 Cups
Green Chilli (slit) - 2 nos
Turmeric Powder - ¼ tsp
Red Chilli Powder - 1 tsp
Coriander Powder - 1 tsp
Salt - ½ tsp
Ginger Garlic Paste - 1 tbsp
Coriander Leaves (roughly cut) - ¼ Cup
Mint Leaves - ¼ Cup
Tomato (chopped) - 1 Cup
Water - 2 Cups
Lemon Juice - 1 tbsp
Cooking Instructions:
1. Add all the ingredients into the pressure cooker. Cook on high heat for 1 whistle, then reduce the heat to medium and cook for 15 more minutes. Allow the pressure to release naturally.
2. Make the coconut paste by grinding together the coconut, fennel seeds, poppy seeds and water. Set this aside.
3. Heat oil in a pan and add the whole spices. Add the onion and green chilli. Saute until the onion turns translucent.
4. Add the salt, turmeric powder, red chilli powder, coriander powder and ginger garlic paste. Saute for 2 minutes.
5. Add the mint and coriander leaves. Saute for 1 minute. Add the tomato and saute for 3-4 minutes, or until it softens.
6. Add the water and bring it to a boil. Cover and cook for 10 minutes, on low heat.
7. Add the cooked mutton to the pan. Cover again and cook for 10 minutes.
8. Add the coconut paste, cover and cook again for 10 minutes.
9. Serve with appam, idiyappam or parotta.
Cooking Tips:
1. To clean the paya meat, wash it well to remove any black spots.
