In this video, I present how to make my version of Catfish Stew. This is one of those recipes that I have been making for years and I figured its time to add it to the channel.
Recipe
Yellow Onion - diced
Sweet pepper- sliced, I used cubanelle in this video but Bell peppers work amazing as well
1 quart stock of your choice
1 big can of crushed tomatoes
2-3 big russet potatoes
catfish filets
parsley- chopped
thyme
bay leaf
garlic powder
salt- as needed
hot sauce- optional
In a stockpot or dutch oven, heat up some oil and add the onion and peppers. Sweat them for a good 10 minutes over medium heat. then add your stock, crushed tomatoes, and potatoes. Bring to a boil then back off to a simmer. Simmer uncovered for 30-45 minutes until the mixture has reduced and started to thicken. Then add your catfish, parsley, thyme, bay leaf, and garlic powder. Cook for 20 more minutes covered. Prior to serving, salt to taste and add your hot sauce if you prefer. Remove bay leaf and thyme stems as you see them.
This recipe makes great leftovers. Just please make sure to refrigerate and it will keep for a few days. I dont know the exact time it starts to go off because, lets be honest, this stew never lasts long in my house. Its usually eaten by the third day.
