Shortcrust Pastry:
- chicken egg 1 piece
- high-grade flour 200g
- unsalted butter 100g
- A pinch of salt
- A pinch of saffron
Filling:
- cherry tomatoes 200g
- 3 eggs
- cream (10% fat) 150ml
- hard cheese 100g
- 1 spring onion
- A pinch of salt
- broccoli 100g
- spinach 100g
Instructions:
Shortcrust Pastry:
1. Sift the flour into a mixing bowl.
2. Add diced unsalted butter, saffron, turmeric, salt, and egg.
3. Mix until the mixture resembles breadcrumbs.
4. Gradually add cold water, kneading until a dough forms.
5. Form a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
Filling:
1. Prepare the vegetables: halve the cherry tomatoes, separate the broccoli into florets, and wash and dry the spinach.
2. Grate the hard cheese.
3. Finely chop the spring onion.
4. In a large bowl, mix eggs, cream, and grated cheese.
5. Add chopped spring onion and a pinch of salt, mix well.
6. Preheat the oven to 180°C (350°F).
7. Roll out the pastry and place it in a pie dish.
8. Prick the base with a fork.
9. Spread the filling evenly over the pastry.
10. Arrange cherry tomatoes, broccoli, and spinach on top.
11. Bake in the preheated oven for about 25-30 minutes until the filling is set and the crust is golden brown.
12. Decorate with fresh herbs or chopped spring onions before serving.
