Egg Masala Curry
Ingredients :-
Eggs - 4
Onions - 2
Peanuts- 1 tb spn
Sesame seeds- 2 tsp
Coconut powder- 2 tsp
Mustard seeds- 1/2 tsp
Cumin seeds- 1/2 tsp
Dried Red Chillies- 2
Curry leaves- 2 sprigs
Turmeric- 1/2 tsp
Ginger garlic paste- 1 tsp
Chilli powder- 2 tsp
Coriander powder- 2 tsp
Garam masala - 1/2 tsp
Tamarind juice- 1 cup
Green chillies- 5
Coriander leaves- 1 bunch
Salt- To Taste
Oil - 2 tb spn
Water - As Required.
Method:
Boil the eggs in water, add little vinegar to peel off the shells easily. Boil them for 8 minutes and de shell.
In a pan dry roast peanuts, sesame, coconut powder till they turn golden brown colour. Transfer it to mixer grinder. Same pan add oil, onion , salt and sauté it. Transfer this to mixer grinder and add some water . Grind all of them together into a fine paste.
Same pan add oil, mustard, cumin, red chillies, curry leaves and ground peanuts- onion paste and cook it. Cook it continuously till oil oozes out of it. Then add turmeric, ginger garlic paste, chilli powder, coriander powder, garam masala and water. Bring it to a boil. Then add tamarind juice, salt. Cook it closed for 8-10 minutes. Then add green chillies, coriander leaves, boiled eggs.
Serve it hot with Rice/ Roti.
