I went to my favorite market in Saigon, looking for the freshest ingredients to inspire a new dish. The incredible fresh creamy tofu is what started the idea for this awesome soup. I loved the idea of using tomato juice for the broth. Replacing the wheat noodles with fresh rice noodles, I think this dish could be a new classic.
