One dish that every Maharashtrian loves and that is Aloo Vadi, made from Arbi Leaves, Besan Batter & usually fried; but we will shallow fry. Another closer version of Aloo Vadi is Patra from Gujarat which I will share in future.
Making Aloo Vadi more healthy; am using Tata Simply Better Cold Pressed Groundnut oil. Recipe -
Ingredients :
Arbi Leaves (cleaned and veins removed)
1 cup Besan
2 tbs Rice Flour
Salt as per taste
1 tsp Dhaniya-Jeera Powder
1 tsp Red Chilli Powder
1/2 tsp Haldi
1/2 tsp Garam Masala
Pinch of Asafoetida Powder
1 tsp Cumin Seeds
2 tsp Safed Til
Crushed Green Chillies (as per taste)
1 tbs Tamarind Pulp
1 tbs Jaggery
Oil (for shallow fry)
Method :
In a mixing bowl, take 1 cup Besan
Add 2 tbs Rice Flour
Add Salt as per taste
Add 1 tsp Dhaniya-Jeera Powder
Add 1 tsp Red Chilli Powder
Add 1/2 tsp Haldi
Add 1/2 tsp Garam Masala
Add a pinch of Asafoetida Powder
Add 1 tsp Cumin Seeds
Add 2 tsp Safed Til
Add crushed Green Chillies (as per taste)
Add 1 tbs Tamarind Pulp
Add 1 tbs Jaggery
Combine everything well together and add Water to make semi thick batter
Spread this batter evenly on Arbi Leaves by placing them one by one
Fold the leaves to form a roll
Arrange the rolls on a steamer plate
Keep this plate in pre heated steamer
Cover the lid and steam for 15-18 min
Let them cool down and cut into pieces
To shallow fry heat Oil in a pan
Shallow fry until golden-brown
