RECIPE:
One 9-inch loaf pan yields 10 servings
Ingredients:
2 cups all-purpose flour
2 ½ tsp baking powder
1 tsp salt
1 cup of unsalted butter (softened).
1 cup granulated sugar
1 ½ cups whole milk ricotta. (water drained)
4 large eggs
1 tsp pure vanilla extract (optional)
Preheat the oven to 350°F degrees and position a rack in the center.
In a bowl, sift together flour, baking powder, and salt.
In another bowl mix softened butter, ricotta (drained), and sugar for about about 2 minutes or until smooth. An electric mixer works best.
Add eggs, one at a time, and continue mixing.
Combine the dry ingredients with the wet ingredients Add the vanilla extract (optional).
Grease the loaf pan with butter and then spread some flour all around the sides. Pour the batter into the loaf pan.
Bake cake for 20 minutes at 350°F degrees. Then rotate the pan 180 degrees to ensure even browning. Lower the temperature to 325°F and continue baking for another 45 minutes.
Let it rest for 15 minutes after taking it out of the oven.
Flip cake onto the cake stand and enjoy!
