Ingredients:
-1/4 Cup and 1 tsp Olive Oil, divided
-2 Tbsp. Red Wine Vinaigrette
-Juice from 1/2 Lemon
-2 minced garlic cloves
-1 Tbsp Stone Ground Mustard
-Salt and Pepper
-1 Tbsp Fresh Basil
-1 Tbsp Fresh Tarragon
-1 Head of Romaine Lettuce
-2 Cans of Tuna
-8 oz Cherry Tomatoes, halved
-8 oz Small Cucumbers, sliced
-1/4 Red Onion, sliced
-2 tsp Capers
-12 oz Green Beans
-Green and Kalamata Olives
-3 Hard Boiled Eggs
-1 Package of tri-colored potatoes
Recipes:
1. To make the dressing, combine oil, vinaigrette, lemon juice, garlic, mustard, salt and pepper to taste, basil and tarragon. Whisk until well combined. Set aside.
2. Boil small potatoes until soft. Dress with 1 tsp. olive oil, salt and pepper.
3. On a bed of lettuce, add tuna, cherry tomatoes, cucumbers, red onion, capers, green beans, olives, eggs, potatoes.
4. Pour Dressing over and add fresh basil to taste.
