INGREDIENTS
For the milk pudding
- 1 liter Milk (any of the this: whole milk, evaporated milk, fresh milk)
- ¾ cup sugar (adjust as needed)
- 1 cup cornstarch
- ½ tablespoon vanilla extract (optional)
For the caramel
- ½ cup sugar
- 1 tablespoon cornstarch
- 1 cup water or milk
Directions
For the milk pudding:
Combine the milk and sugar in a large pot. Add the cornstarch and stir until it dissolves. Heat the mixture using low heat while stirring occasionally. It will thicken as it boils. Add some drops of vanilla extract and stir well.
When the mixture is already thick, allow it to cook for 1 to 2 minutes.
Transfer the milk pudding mixture in a baking pan. Tap for a few times on the table to flatten the top.
Let it cool and chill in the fridge for at least 30 minutes.
For the caramel:
In a small bowl, mix water or milk with cornstarch and stir until dissolved. Set aside.
Heat some sugar in a pan until it caramelizes. Swirl until you get an amber color.
Add the cornstarch mixture little by little while stirring continuously.
Continue cooking the caramel until it thickens. When it starts boiling, stir to avoid lumps. Scrape the edges and the bottom. Let it cool for a bit.
Caramel Milk Pudding:
Pour the caramel over the chilled milk pudding. Spread the caramel over the top. Let it chill in the fridge for at least 30 minutes.
Scoop some milk pudding on a serving plate and enjoy!
