Ingredients:
1 large cauliflower
60g unsalted butter
1 onion/ 3 large shallots
150ml unsweetened almond milk
100ml double cream
900ml bone broth / chicken stock(cubes are fine)
1/4tsp ground white pepper
Grating of nutmeg
1-2tsp lemon juice
For the Gruyere & Rosemary Crisps:
60g finely grated Gruyere
1tsp finely chopped rosemary
Garnish:
1 Garlic bulb
A handful of Macademia nuts (25g)
Method:
-Trim the base off the cauliflower and cut away the leaves. Cut the cauiflower into florets and roughly chop, discarding the core.
-Heat 40g butter in a large pan over a medium heat. Stir in the onion/shallots and a good pinch of salt. Cover and fry for 10 minutes, stirring occasionally.
-Add the milk and cream and simmer gently for another 5 minutes, add the stock and simmer for another 5 minutes. Set aside and cool for 15mins. Blend with the white pepper, nutmeg and lemon juice to taste. Check seasoning.
-For an extra smooth texture sieve into a clean pan.
For the Gruyere Crisps:
Preheat oven to 200 degrees and line a large baking tray with baking parchment. Lightly mix the Gruyere with the rosemary. Place in 6 heaped piles. Cook for 8 minutes or until bubbling and golden. Cool for 1 minute on tray and transfer to kitchen paper to soak up oil.
Garnish:
Put the garlic bulb in foil with a little olive oil and roast in oven for 45 minutes, do the same with the nuts but for 20 minutes. Break up the nuts and squeaze out the garlic. Garnish each bowl with some of each.
