Sharing my version on How to Cook Dried Pork Adobo, one of the most well known dish in the Philippines. This recipe is simple and easy to make and only requires very few ingredients.
Here's what you'll need
1 1/2 kg Pork belly, cut into serving pieces
1 head Garlic, chopped
1/2 cup Soy sauce
1 tbsp Black peppercorns
3 pcs Dried bay leaves
4 tbsp Vinegar
1 cup Water (add more if nedeed)
1 tbsp Sugar (optional)
Salt to taste
2 tbsp Cooking oil
PROCEDURES
- In a bowl with the pork, add garlic and soy sauce.
- Mix well. Cover and marinate for at least 1 hour or overnight.
- After 1 hour, heat the pan, over high heat then add oil.
- Add the marinated pork, cook for a few minutes.
- Add black peppercorns, dried bay leaves and water.
- Cover the pan, reduce the heat and simmer for 30 minutes.
- After 30 minutes, remove the cover, then add vinegar.
- Cover again and simmer for 10 to 15 minutes or until pork meat is tender.
- Remove the cover, then add sugar.
- To make your pork adobo's dry, remove the sauce, set aside then fry the pork meat for a
few minutes. Continue stirring.
- Add the sauce back to the pan, stir and continue cooking until completely dry and the oil
comes out of the pork.
- Transfer to a serving plate or bowl.
- Serve with hot steamed rice. ENJOY!
