Coffee beans prefer to grow between 1300 and 2000 metres in height, in the shade. Hence the many banana trees between the coffee, the large leaves provide shade. As soon as the coffee bean is coloured red, you can pick it. Then break open a red fruit and taste the slippery coffee bean. Contrary to what you might expect, the taste is very sweet.
After the hard work of picking beans is done, they go through the machine to separate the bean from the casing. Then they end up in a container with water, where the good beans stay on the bottom and the bad ones float on top. The beans must then be dried. How this is done differs per coffee finca. This can be done with a kind of oven or in the sun.
After drying, the beans are roasted and they can be ground for use.
At least you will also get a cup of fresh traditional 'Salento' coffee.
