Yield - 6 servings

Marinating time – Approx. 4hrs

Ingredients:
Pig foot – 2 lbs
Washing of pig foot:
Fresh lime juice- 6 tbsp
Water – 6 cups
Marinade mix ingredients:
Whole habanero – 1 whole
Chadon beni/Culantro – 3 tbsp (finely chopped)
Pimento peppers – 3 tbsp (finely chopped)
Garlic peeled – 3 tbsp (finely chopped)
Salt to taste
Black pepper -1 tbsp
Cucumber – 1 cup (sliced thinly)
Red onion – 1 cup (sliced thinly
Chive chopped – 3 tbsp
Water – approx. 2 cups
Lime juice – 6 tbsp
For boiling:
Salt – 3 tbsp
Method:
Washing and cleaning of pig foot:
Clean any hair off of the pig foot.
Using a large bowl, place pig foot, water and lime juice, mix for 2minutes.
Allow pig foot to soak for 10 minutes then rinse under running water for 2 minutes.
Boiling of pig foot:
Place pig foot in large pot and fill with water.
Put pot with pig foot and water on stove, turn on heat, add salt and cover.
Boil for 40 minutes or until pig foot is cooked.
When cooked, strain and allow to cool.
Marinating of pig foot:
In a large bowl add, fresh lime juice, water, habanero, chadon beni, pimento, garlic, black pepper, cucumber, red onion, chive, cooked cooled pig foot and salt to taste.
Mix thoroughly for 2 minutes.
Allow souse to marinate for at least 4 hours, before serving.
