### **3 Kilo Chicken Biryani Recipe

🔥**Ajzaa (Ingredients):**
- **Chicken:** 3 kilo
- **Chawal (Sela Rice):** 3 kilo (21 cups)
measure cup se 16cups + half cup
- **Namak:** 6 teaspoon (zaika ke mutabiq) chicken mein
- **Chawal ubalne mein namak:** 5 Tbsp
- **Tamatar (Tomatoes):** 1.25 kilo (sawa kilo)
- **Dahi (Yogurt):** 3 pao (kareeban 750 gram)
- **Pyaz (Onions):** 1.5 kilo (derh kilo), bareek kati hui
- **Pisi Laal Mirch (Red Chilli Powder):** 6 teaspoon
- **Dhania powder:** 3Tbsp
- **Adrak Lehsan Paste (Ginger Garlic Paste):** 4 tablespoon
- **Fresh Garam Masala Powder:** 2 teaspoon
- **Darchini (Cinnamon Sticks):** 2-3
- **Bari Elaichi (Black Cardamom):** 2-3
- **Tez Patta (Bay Leaves):** 2-3
- **Cumin seeds 1Tbsp:**
- **Hari Mirch (Green Chilies):** 7-8
- **Dry Aloobukhare:** 10-12
- **lemon:** 2
- **Hara Dhania (Fresh Coriander):** 1cup
- **Pudina (Mint Leaves):** 1 cup
- **Lemon:** 3 ( juice)
- **Tel (Oil):** 1.5 cup
- **Zarda Rang (Food Color):** 2 teaspoon
- **Kewra Water:** 2tablespoon
🔥1. **Chawal Ki Tayari:**
- Chawal ko ache se dhoke 3 ghante ke liye bhigo dein.
- Bare
Pot mein paani ubalein aur usme 5 Tbsp namak 3 Tbsp oil or 3 Tbsp vinegar dalen
- Chawal 70% galne tak ubalein, phir pani nikal kar side par rakh dein.
🔥2. **Chicken Masala:**
- Chicken mein , dahi, lassan adrak hari mirch paste ,pisi laal mirch, garam masala aur namak dhania powder , aloo bukhare 10_12 lemon juice , orange food colour daal kar achi tarah se mix kar k 2 ghante rakh den
- 1.5 cup oil ko bary pot mein garam karein, sabut garam masale dalen phir pyaz ko fry karein jab tak golden brown ho jaye to tamatar dalen or dhak kar bujhalen achi tarhan phir marinated chicken shamil kar k chicken galne tuk pakalen.
🔥3. **Biryani Ki Layer :**
- Bara pateela len aur aadhe ubale chawal ka pehla layer bana dein.
- Uske upar chicken ka masala daalein aur achi tarah se phela dein.
- Baki chawalon ka doosra layer chicken ke upar daalein.
Phir 1 cup dahi garam masala with orang food colour ki layer lagaen
- Kewra water dalen
- Upar se fried pyaz aur kuch fresh pudina daalein.
🔥4. **Dum lagana:**
- patelay ko tight dhakkan se band karein or geela kapra laga den .
- Pehle 5-7 minute tez aanch par pakaein, phir heat ko low kar ke 15-20 minute ke liye dum par chhod dein jab tak chawal puri tarah gal na jayein aur biryani ka rang achi tarah mix na ho jaye.
🔥5. **Serving:**
- Biryani ko neeche se halki haath se mix karein taake layers achi tarah se mix ho jayein.
- Garam garam raita, salad aur chutney ke sath serve karein.
