I was so happy to receive these positive feedbacks for this Banoffee Cake with Caramel Sauce. I created this recipe a while back specifically for a friend who ordered the same cake four times but I never got the chance to make a video.
So as I am leaving the Isle of Man today, I am posting this video especially for my friends. Sebastien and Niamh, this one is for you!

INGREDIENTS:
FOR THE CARAMEL SAUCE
* 375g Caster Sugar
* 5 tbsp Water
* 213ml Heavy Cream
* 75g Butter
* 1/2 tsp Vanilla Extract
* A Pinch of Sea Salt
FOR THE SPONGE
* 300g All-purpose Flour
* 11g Baking Powder
* 3g Bicarbonate of Soda
* 300g Caster Sugar
* 180ml Vegetable Oil
* 300g Ripe Bananas
* 3 Large Eggs
* 75g Natural Yoghurt
* 1 1/2 tsp Vanilla Extract
FOR THE FROSTING
* 226g Cream Cheese
* 100g Caster Sugar
* 1 tbsp Caramel Sauce
* 654ml Heavy Cream
* 1 tsp Vanilla Extract
FOR THE FILLING
* Bananas (About 3 medium bananas)
* 1/2 tbsp Lemon Juice
I used four 8 inches (20cm) round baking pans.
