Fava beans have a creamy texture and fresh flavor that make them a great springtime alternative to peas. The only problem is, once you pull them out of the pods, there's a second skin and it's a huge pain to peel. Here's a tip to make it faster and easier. Tear the pod open and pull the beans out. Put them on a tray and freeze them for about thirty minutes. When you're ready to use them pull them out of the freezer and let them thaw for about ten minutes. Then you can just slip them right out of the skins.
