To those of you on ketogenic and low-carb diets or even those who have diabetes and trying to eat healthier, here's a keto roti recipe!
Now you can enjoy roti without the added carbohydrates, or the guilt (haha). Hope you enjoy this one!
*17 grams in the 2 rotis. Therefore, one roti is about 8.5 net carbs*
Ingredients:
1/2 cup Almond Flour ( 5 grams of carbs)
1/2 cup Coconut Flour ( 12 grams of carbs )
1/2 teaspoon Gluten-Free Baking Powder
2 teaspoons Xanthan Gum OR Psyllium Husk - I find that using 1 tsp XG + 1 tsp PH works better
1/2 teaspoon Salt
1/4 cup of Water (or enough to pull the dough together)
Ghee or Butter - optional
This makes 2 Rotis.
