Pastafrola is Argentina's most emblematic dessert. The Argentine version of the Italian Crostata, pastafrola is yet another example of how Italian culture has influenced Argentine culture and cuisine.
Pastafrola is jam tart consisting of a shortcrust pastry called "masa frola" in Argentina because it is used to make not only pastafrola but also many other Argentinian desserts. The same shortcrust pastry is called "pasta frolla" in Italy, so this is likely the origin of the name.
Interestingly, a very similar jam tart in Greece is called "pastaFLORA," so the spelling is just a bit different.
Similar to the Italian crostata, Argentine pastafrola is filled with "dulce," a thick jam that holds its shape. The most common filling for pastafrola in Argentina is "ducle de membrillo," a thick, sliceable paste made from quince fruit. Although dulce de membrillo is the most common filling, other fillings include "dulce de batata," sweet potato paste, "dulce de leche," milk caramel, and Nutella.
Once filled, pastafrola is then given a lattice top. Although it may look like a pie, the texture is very different: shortcrust pastry has a soft, crumbly texture, and the filling is thick and not runny. As you can see, calling a pastafrola a "pie" does not do it justice.
Pastafrola is beloved by all Argentines. It is common in restaurants and cafes, bakeries, birthday parties, and picnics. It is also very commonly eaten for "merienda," or afternoon tea. When eaten for afternoon tea, it is common to drink "mate," a type of loose-leaf tea, along with the pastafrola.
In my opinion, a pastafrola recipe is a lot easier than an American fruit pie recipe because pastafrola uses a no roll pie crust, the filling is not runny, and it is very easily transportable.
