Shiitake mushrooms are my FAVORITE. The flavor is so rich and complex, but they're often extremely expensive at the grocery store. So I figured I'd grow some of my own and cook them up for you guys!
Keep in mind this is a partial grow guide...to grow from "scratch" you'd need to create your own substrate and inoculate it with spores, let the spores develop shiitake mycelium, and THEN you'd get to this step in the process. But for the first shiitake video, I kept it simple and practical and went with a hardwood sawdust kit from Fungi Perfecti.
SHIITAKE MUSHROOM RECIPE
70% olive oil
15% sesame oil
10% tamari or soy
5% white wine
pinch of black pepper
1-2 cloves of crushed garlic
Cut stems off, marinate in mixture, and bake uncovered at 350° for 30-40 minutes. Enjoy!
