Ingredients:
1/2 c butter 1 1/2 tsp baking powder
1 c sugar 1/4 tsp salt
2 eggs 1 c blueberries
1/2 c milk 1/4 c lemon juice
2 tsp lemon rind 1/3 c sugar
2 c flour
Directions:
Cream together butter and sugar until well combined. Then add in eggs and milk and mix well. Add in the lemon zest and stir in.
In a separate bowl stir together flour, baking powder, and salt. Gradually add dry mixture to creamed mixture.
Coat blueberries in flour to prevent sinking and carefully fold them in by hand. Transfer to a greased loaf pan and bake in a 350 F oven for 50-60 minutes or until done.
To make the glaze heat 1/4 c lemon juice and 1/3 c sugar in a saucepan on medium heat. Cook and stir until it reaches a syrup like consistency. Pour glaze over loaf as soon as it comes out of the oven. Allow the loaf to cool in the pan for 10 minutes and then transfer to a wire rack to cool completely.
