Sweet Filling
The classic filling for Atayef Asafiri is ashta. Ashta is a clotted cream made from whole milk. It can be made at home, but, to be honest I highly prefer the ricotta cheese filling. This Atayef batter is very similar to pancake batter, but runnier. Atayef or Qatayef are Middle Eastern pancakes that are filled with white cheese or nuts then fried or baked, and soaked in a rose sugary syrup.
Ingredients:
Atayef Dough – طريقة عمل عجينة القطايف
2 cups of Flour
2.5 cups of lukewarm water
2 tablespoons of Granulated Sugar
1 teaspoon of instant yeast
1 tablespoon of rose water
2 tablespoons of Orange blossom water
Mix well the ingredients
Let it rest for 30 minutes
Filling:
300 gr. of crushed nuts
4 tablespoons of Granulated Sugar
2 tablespoons of Rose water
Mix well the ingredients

What are Atayef?
Once you try the Atayef – you will fall in love! I can guarantee you that! They’re basically the Middle Eastern version of pancakes, and they’re stuffed with lots of tasty fillings. Atayef (Qatayef) are usually prepared by street vendors in the streets of Jordan, Palestine, Syria, Lebanon, Morocco, and Egypt. They are also sold in bakeries nowadays, and some people prepare them at home. The other side of the crepe has many holes on the surface and is very sticky. During cooking, small bubbles form on the surface of the pancakes and give them this lace texture. The standard atayef are crispy on the top and fluffy on the inside. In Lebanon and the Middle East, cinnamon and cardamom are added to the nut and almond mixture. The recipe presented here is the mini version of these delicious pancakes. They are called atayef asafiri in Lebanon and Syria. Unlike standard atayef, they are not deep-fried. They are therefore lighter and more digestible than standard atayef.
There are some tricks to make perfect qatayef. Indeed, it is possible to miss the preparation of the pancake batter. If the dough is too thick, the bubbles will not form and the ends of the pancake may not stick when trying to form the cones.
Qatayef is a staple dessert in the Middle East especially during the holy month of Ramadan. These stuffed and fried pancakes are the darling on dessert table.
Qatayef / Atayef or Katayef is an iconic Middle Eastern treat, made from pancakes stuffed with nuts and golden fried then dunked is thick simple syrup. Crunchy sweet and oh boy so satisfying dessert.
Types of Atayef
Regular Atayef: they’re usually bigger in size, crunchy from the outside, filled with either nuts (Walnuts, pistachios, or almonds) with cinnamon, or with white cheese (Ricotta can work) and then deep fried and soaked in (or drizzled with) a sugary rose water syrup or less commonly is baked with a little bit of oil and then drizzled with the syrup.
Atayef Asafiri (or mini Atayef): they’re usually smaller in size, and have a soft exterior, served without cooking or frying, and are commonly filled with cream and pistachios. Fillings for this kind of atayef can be fun, you can stuff them with Nutella, fresh fruits, nut butter, you name it!
Giant Atayef: they’re huge (see picture above), usually filled with cream and nuts, but it can also be stuffed with white cheese and then drizzled with sugary syrup!
Qatayef Asafiri with Ashta
Qatayef are stuffed Arabic pancakes with lots of varieties and fillings. Classic qatayef are stuffed, fried, and then drenched in simple syrup. This time I am showing you a different style of qatayef. Qatayef Asafiri stuffed with creamy ashta, dipped in crushed nuts and drizzled with honey or syrup. So tasty and delicious, they are called the pancakes of the Middle East. The qatayef or قطايف (also called atayef, katayef or kataif) sit on all tables during the holiday season of Ramadan.
