Traditional Marathi sweet recipe, Puranache Dind
Ingredients:
- 1 cup chana dal
- 2 cups wheat flour
- 2 tbsp oil
- Pinch of salt
- Water (as needed)
- 1 cup jaggery
- 1/4 tsp nutmeg powder
- Ghee (for serving)
Instructions
Step 1: Prepare the Chana Dal
Wash and soak 1 cup chana dal in water for 4-5 hours. Then, pressure cook with approximately 2 cups water for 4-5 whistles or 6 minutes in an Instant Pot.
Step 2: Make the Dough
In a separate bowl, combine 2 cups wheat flour, 2 tbsp oil, and a pinch of salt. Gradually add water and knead the dough for at least 10 minutes until it becomes smooth. Cover and rest until we complete the next step.
Step 3: Prepare the Puran Stuffing
Once the chana dal is cooked, drain excess water and transfer it to a cooking pan. Add 1 cup jaggery and heat until it starts melting. Using a masher, mash the mixture until it thickens. Add 1/4 tsp nutmeg powder, mix well, and turn off the flame.
Step 4: Assemble and Steam the Dind
Take small portions of the dough and roll them out thin. Apply oil or flour if needed. Fill with the puran stuffing, shape, and prepare the remaining dind. Steam for 10 minutes using a steamer or a pan with a banana leaf, parchment paper, or baking paper.
Step 5: Serve and Enjoy!
