PORK PATA HUMBA (or simply humba) is one of the many versions of pork humba. In this recipe, we only us pata or pork hocks instead of pork liempo or kasim. Pork hocks is braised in soy sauce, pineapple juice and vinegar until soft and melt in your mouth. This recipe also includes salted black beans or also called as tausi and banana blossom, or bulaklak ng saging. Let's cook!

1 kilo Pork Pata (pork hocks)
1 sibuyas (onion)
6 butil na bawang (garlic)
1 can ng pineapple juice 250ml
1/4 cup suka (vinegar)
1/2 cup toyo (soy sauce)
Paminta
2 to 3 dahon ng laurel (dried bay leaf)
Tubig pangluto sa pata (water to cook the hocks)
Bulaklak ng saging (banana blossoms)
2 kutsara tausi (salted black beans)
1 kutsara asukal (optional) (sugar)
Mantika (oil)
