INGREDIENTS:
3 avocados
2 roma tomatoes
1/2 red onion
1/2 English cucumber
1/2 bunch Italian parsley (about 3/4 cup)
1 cup feta cheese, crumbled
1/3 cup extra virgin olive oil
1/3 cup red wine vinegar
1-2 cloves garlic, mashed
Salt & pepper to taste
Tortilla chips for serving
RECIPE:
Chop all of the veggies and add them to a large bowl, followed by the crumbled feta, olive oil, vinegar, garlic, salt & pepper. Toss to coat well, and mashing as desired. Serve and enjoy.
