Learn how to make crispy, juicy chicken drumsticks paired with creamy mashed potatoes. This easy and delicious recipe is perfect for family dinners or special occasions. With a flavorful spice rub and a rich, buttery mash, this dish is sure to become a favorite!
Ingredients
For the chicken:
8 chicken drumsticks
1 tsp salt
2 tsp garlic (powder or minced)
1 tsp black pepper
1 tsp paprika
1 tsp marjoram (dried)
1/2 tsp thyme (dried)
4 tbsp olive oil
Juice of half a lemon
For boiling the potatoes:
1.5 kg potatoes, peeled and diced
Plenty of water for boiling
1 heaping tsp salt
For making the mashed potatoes:
2 tbsp salted butter
120 ml milk
1/2 tsp salt and black pepper (to taste)
Instructions
1. Prepare the chicken:
In a small bowl, mix the salt, garlic, pepper, paprika, marjoram, thyme, olive oil, and lemon juice.
Rub the mixture all over the chicken drumsticks, including under the skin for extra flavor.
Let the chicken marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
2. Cook the chicken:
Preheat the oven to 180°C (350°F).
Place the chicken on a baking dish. Cover with foil and bake for 40 minutes.
Remove the foil and bake for an additional 20 minutes to crisp up the skin.
3. Boil the potatoes:
Place the diced potatoes in a large pot and cover with plenty of water.
Add the heaping teaspoon of salt and bring to a boil. Cook until the potatoes are tender (about 20 minutes).
Drain the potatoes.
4. Make the mashed potatoes:
Add the salted butter, milk, and 1/2 tsp salt and pepper to the drained potatoes.
Mash until smooth and creamy. Adjust seasoning to taste.
5. Serve:
Plate the mashed potatoes and place the crispy, juicy chicken drumsticks on top or beside them. Optionally, drizzle some of the pan juices from the chicken over the mashed potatoes for extra flavor.
