1 cup sourdough starter discard
1/3 cup lukewarm water
2 1/2 cups All purpose flour (I recommend King Arthur unbleached)
1 t salt
1/2 teaspoon instant or active dry yeast
1. Stir your discard down and measure 1 cup into a mixing bowl.
2. Add the water, flour, salt and yeast . Mix to combine, then knead for 7 minutes with the dough hook. (you can knead dough by hand)
3. Place dough in a greased container, cover and let rise until almost doubled in size. This can take anywhere from 2 - 4 hours depending on the strength of your discard.
I like to put my dough in the oven with the light on. I also have a sign that says "do not turn on over" that I tape to my oven settings so I do not accidentally turn on over and ruin my dough. (which has happened!!)
This is enough dough for 1 large sheet pan or 2 smaller 12 inch pizzas. If dough is not cooperating and doesn't want to be spread out let rest 15 minutes and try again. You may have to do this a couple times.
bake in a 450 degree oven. You can bake dough alone first for 5 minutes then add your sauce, cheese and toppings. You can also try to put your sauce on the dough and bake for 5 minutes before adding cheese and toppings. See which way you like best.
(Dough can be frozen but it does change the consistency a little. I like it both ways)
