This is a long video, in it we cover all the aspects of canning home grown (or purchased) potatoes....from peeling to pressure canning to the shelf.
We also go into some detail on how to spread this process out into a few days time by utilizing citric acid in the peeled potato water.
Additionally we review (and see) how the All American canner model 941 (41 quart model) is used and we even double stack the quarts (not pints, QUARTS!) We go into some great detail.
