Hi all
Karela or bitter gourd or bitter melon is another one of those love it or hate it vegetables, with the strong bitter taste being too much for most people. We tried to remove some of the bitterness by letting the hurdee and salt draw out the liquids from the karela and squeezing out as much water as we could and then fried the karela before adding it to the chutney
Ingredients
250g karela
To draw out bitterness:
1 tsp rough salt
1 tsp hurdee (tumeric)
For Braising
1 small onion, sliced
1/2 cup oil
1 tomato, diced
1 tsp mixed masala
1 tsp hurdee
1 tsp pure chillie powder
1/2 tsp garam masala
1/2 tsp dhania powder
1/2 tsp jeera (cumin) powder
2 cloves garlic, sliced
curry leaves
1/2 tsp salt (adjust to taste)
fresh dhania to garnish
Serve with hot soft rotis:
