From the river to the sea, Palestinian Maqluba shall be free. Much love to my buddy Nader for sharing us his family's recipe:
"My mom grew up on the West Bank. She grew up in a town called Nablus. Her mom was from Nablus. My grandmother was the one that taught my mother. My mom had actually passed away in 2011. And when she passed away, she didn't hand down the recipes for all these dishes that I grew up eating like Maqluba.
In my opinion, Palestinian cuisine is the best cuisine in the world. The thought of me not being able to eat Maqluba ever again was a nonstarter. So I spent years after she passed away, teaching myself how to make maqluba and doing it to the justice that she taught because I believe Palestinian cuisine, just like its people, do need to live on. It's the beauty and the essence of who we are.
And so these flavours come from exactly like I remember eating growing up. While my mom showed me a lot of how to do things, I made sure that I did her justice after she passed away."
