This recipe is one of my faveees – its like a perfect autumn / winter dish and I made it on the most rainiest day, it was just perfect. Its super rich, thick and it has a little special ingredient. You don’t want to miss it out as it just add that last layer of flavour
Ingredients:
• 450g Mix of Mushrooms – sliced
• 2 tbs butter
• 2 tsp salt
• 5 – 8 dried porcini mushrooms
• 2 chopped shallots
• 2 chopped carrot
• 1 tsp thyme
• 2 tbsp flour
• 2 – 3 garlic cloves diced
• 2 tbs tomato paste
• 1 cup red wine
• 1 cup veg stock
• 1 bay leaf
• 1 tsp Marmite
Method:
1. Melt 1 tbs butter in a deep pan, then add the sliced mushrooms and salt (1tsp), cook in batches if needed then remove from the pan – cook on a medium high heat to get a nice char!
2. Soak the dried porcini mushrooms in cup boiling water and set aside
3. Melt 1 more tbs butter to pan, then add shallots and cook down till soft
4. Add the carrots, thyme, garlic and 1tsp salt, then cook for a further couple mins
5. Add the tomato paste and mix in for 1 min, then add the flour and cook for a further 2 mins
6. Now add the wine and cook down until reduced slightly – it may be really thick but that’s ok!
7. Add the dried mushrooms, along with the cup of mushroom liquid and mix well
8. Add the veg stock, marmite, bay leaf and bring to a boil, then reduce the heat & add in the cooked mushrooms
9. Simmer on low till the sauce has thickened slightly and the carrots are cooked. Best served over mash potatoes
