Oshiruko (Red Bean Soup) Serves 4-6
1 cup (160 g) red Adzuki beans, rinsed
8 cups (1896 ml) water
1/4 cup (50 g) sugar, or to taste
1/4 teaspoon salt
Place rinsed red beans and 5 cups of water into a pot, bring to a boil on medium-high heat. Once boiling, reduce to medium heat and cook until the beans are tender and soft, stirring occasionally and adding water (a total of 8 cups) to keep the beans submerged, around 6 hours. Once the beans can be easily mashed, use a potato masher (or a hand blender) to roughly mash 1/2 of the beans to add different textures to the soup. Then add sugar and salt. Stir to combine, and keep warm on low heat until ready to serve.
Dango makes 12
1/2 cup (75 g) Mochiko sweet rice flour
3 tablespoons (42 ml) water
1 teaspoon sugar
Pinch salt
In a bowl add all ingredients and knead until a dough forms into a smooth, soft ball that resembles play-dough. Divide the dough into twelve, shape into balls and make an indent in the centre by using your thumb to press down. The indent in the dango makes for little scoops for the soup.
Add dango into a pot of boiling water on medium-high heat, and cook until they float, around 2-3 minutes. Remove from heat and place in cold water until ready to serve.
