All parts of fennel are edible and beneficial to our health. The commonly used fennel parts are bulbs, young tender shoots, seeds and flowers. These are available at different stages of the development of the fennel plant. Be it spring, summer or autumn, there is always something available to harvest from a fennel plant. Watch how you can harvest fennel not only from your garden, but also from the wild ( harvesting from the wild is called "foraging").
I filmed this video in Northern California Bay Area, where fennel got naturalized and grows in the wild in abundance. This naturalized fennel is a great source of food (tender greens, flowers, seeds), and/or you can grow both naturalized "wild" version and the cultured finocchio version in your garden, harvesting all parts of the plant at different times of the season
