Whole BBQ Trout Recipe [meal inspo]
- whole rainbow trout, gutted & cleaned
- 1 lemon, halved and sliced (keep the other half for the marinade)
- 2 to 3 sprigs rosemary (you can use any herb that you like)
- sea salt & freshly ground black pepper
For the Marinade:
- 1/4 cup olive oil
- 2 garlic cloves, crushed
- rosemary, finely chopped
- 1 tsp smoked pimenton (paprika)
- lemon juice
- salt & black pepper to taste
Method:
To make the marinade, crush the garlic in a mortar & pestle add the rosemary & chilli flakes and create a paste. Add the olive oil, lemon juice & the pimenton and season to taste.
Rinse the fish with water, pat dry with kitchen paper and cut slits in the flesh.
Pour half of the marinade inside the fish, then add the lemon slices & rosemary sprigs. Rub the marinade on the outside of the fish and leave for 30 minutes.
Pre-heat the Weber Q for at least 10 minutes. Brush grates with olive oil to prevent the fish from sticking.
I cooked the fish around 7 to 8 minutes on the first side (at medium heat) and flip and cook for another 7 to 8 minutes.
Tip:
If you pre-heat the BBQ properly, clean and oil the grates and wait for the fish to release on it's own, it won't stick to the grates!
