Zucchini Noodle with Basil Pesto
Ingredients:
1-2 Medium Zucchini
1 cup Basil
1/2 cup Spinach
2 cloves of Garlic
1/4 cup grated Parmesan
2 tbsp Pine Nuts
1/2 cup Olive Oil
2 tbsp Lemon Juice
** Paleo, Vegan, Dairy-free option: Eliminate cheese.
** Nut Free: Do not add nuts for the pesto. It will still taste delicious! You can add 1/2 cup Basil.

I used the KitchenAid 3.5 cup Mini Food Processor to blend the pesto. [ Ссылка ]
** You may also use a blender for making the pesto.
