This riff of a tom collins brings some wonderful flavours together. Top Shelf Gin is dry and citrus with hints of juniper, the peppery notes and vegetal attributes of sage mixed with bright and refreshing citrus flavours of fresh lemon juice. The lot topped with GRUVI alcohol free Prosecco ) or you can use regular Prosecco to add some effervescence and light and refreshing grape flavours. Refreshing to the MAX and delightfully balanced, crisp flavour.
Ingredients:
1 ½ oz Top Shelf Gin
6 dashes Top Shelf Lemongrass Bitters
¾ oz Fresh Lemon Juice
½ oz Sage Syrup (recipe in "syrups and modifiers" section of our channel)
GRUVI Non Alcoholic Dry Secco OR Prosecco

Directions:
Add Top Shelf Gin, Lemongrass Bitters, lemon juice, and syrup to a cocktail shaker with ice. Shake and “dirty pour” the contents into a Collins glass without straining. Add ice to glass if necessary. Top with GRUVI Non Alcoholic Dry Secco. With a peeler, peel a wide strip of skin off a lemon, avoiding the pith. Express the oils of the peel over the cocktail and rub the side of the glass. With a paring knife clean up the edges of the peel and cut a slit in the centre. Twist and add to the rim of the glass. Add a sage leaf on top of the cocktail.
