Rava Kesari is a popular South Indian dessert made from semolina (rava), sugar, ghee, and flavored with saffron or any other fruits or vegetables of your choice, then garnished with nuts and raisins. It has a rich, aromatic taste and a soft, melt-in-the-mouth texture. We have used beetroot for the beautiful color! So, no added artificial colors. Ingredients:
Semolina - 1/2 cup
Milk - 1 cup
Grated beetroot - 2 Tsp
Ghee - 2 Tbsp
Sugar - 1/4 cup
Cardamom powder - 1/4 Tsp
Cashews - 2 Tbsp
Raisins - 2 Tbsp
Preparation:
Let's start with frying the cashews and raisins, by adding ghee, then in the same pan add Semolina and fry for 2 minutes on low heat. Now in a cup of hot milk add grated beetroot and mix well, then add it to the fried semolina then mix well. Now add water, sugar, cardamom powder and mix well. Let it cook for 2 minutes or until it thickens. Transfer it onto a parchment paper and flatten, then trim the edges and cut into the pieces of desired shapes. Garnish with the fried cashews and raisins. Yummy Rava Kesari / semolina pudding is ready to serve!!! It's a must Try soft dessert!
