Hi welcome to Caribbeanj03. Thank you for coming into my kitchen with my sister and I. Today, she will be canning red, black, pinto, white beans and pigeon peas (gandules). She is using the instant pot and powder pressure cooker xl pot.
Canning liquid (Brine)
1) Chicken broth or stock
2) onions
3) garlic cloves
4) Bay leaves
Here are the basic steps:
1) Pick or sort beans.
2) Wash beans with cold water.
3) Soak the beans for half hour in hot boiling water
2) Add fresh hot water to a pot with the beans to speed up the cooking.
3) Bring to a boil and let boil rapidly for 2 minutes while you prepare your pressure canner.
4) Pack the partially cooked beans into canning jars, seal with 2 part canning lids and load into your pressure canner.
