Jerusalem artichokes vegan soup with spicy croutons
Ingredients for the soup:
Extra-virgin olive oil 2 tbsp,
white onion 100 g,
potatoes -peeled and diced- 500 g,
jerusalem artichokes -peeled and diced- 500 g,
vegetable stock 1 litre.
Ingredients for the spicy croutons:
2 slices of bread -diced-
paprika 1/2 tsp
black pepper 1/2 tsp
salt 1/2 tsp
extra-virgin olive oil 2 tsp
Ingredienti per la zuppa:
Olio evo 2 cucchiai,
cipolla bianca 100 g,
patate - sbucciate a cubetti- 500 g,
topinambur -sbucciati e tagliati a cubetti- 500 g,
brodo vegetale 1 litro.
Ingredienti per i crostini:
2 fette di pane tagliate a cubetti.
paprika 1/2 cucchiaino,
pepe nero 1/2 cucchiaino,
sale 1/2 cucchiaino,
olio evo 2 cucchiaini.
