Take 400 gms of Paneer and cut it into thick pieces. In a frying pan, shallow fry the paneer until it turns golden brown and crispy.
Remove the fried paneer and set it aside.
In a blender, blend 50 gms of Watermelon Seeds (Magaj) and 50 gms of Cashews (Kaju) to form a smooth paste.
Heat 2 tbsp of Desi Ghee and 1 block of Butter in a pan, then add 3 Cardamom pods, 1 stick of Cinnamon, and 1 Bay Leaf for added flavor.
Add the Cashew and Watermelon Seed paste, along with 1.5 tsp of Black Pepper Powder, and cook until the oil starts to separate from the mixture.
Stir in 150 gms of Curd, a pinch of Kasuri Methi (Fenugreek Leaves), and 1 tbsp of Garam Masala. Mix well.
Add half a cup of Fresh Cream and 2 slit green chilies for a creamy, spicy texture.
Finally, add the fried Paneer to the gravy, mix thoroughly, and let it simmer on low heat for 5 to 10 minutes.
Paneer Kalimirch is now ready to be served! Enjoy this rich and creamy dish with naan, roti, or rice for a complete meal.
