Cabbage Foogath aka ‘Fugad de Repolho’ is a Kokani or Goan classic and a staple in every household. It is a simple, comforting, quick recipe with blended flavours of cabbage and coconut. Traditionally it is served with rice and Goan fish curry. It can also be served with rice-dal, phulka, chapati, roti or paratha.
‘Foogath’ or ‘Fugad’ is a generic Goan term for any dry vegetable dish cooked with coconut & curry leaves. It is derived from the Portuguese phrase ‘refogar’ which means “to braise” or “stir-fry”.
Goan Cuisine is a confluence of various cultures such as the Portuguese, Arab, Brazilian, African, French, Konkani, Malabari, Malaysian and Chinese. Goan cuisine is characterised by the ample use of coconuts, cashew, kokum, fish, spices, rice and vinegar. The Portuguese left an indelible mark on its cuisine. Many Goan dishes are either similar to or variations of their traditional Portuguese dishes. Rooted in Portuguese cuisine, many Goan dishes are either similar to or variants of Portuguese dishes both in naming or their use of ingredients.
INGREDIENTS:
500 g Cabbage, shredded
1 Onion (large), chopped
½ cup scraped/ grated Coconut
1 sprig/ 8-10 Curry leaves
2-3 Green chillies, finely chopped
1 tsp Mustard seeds
1 tbsp Coconut oil/ neutral oil
Salt to taste
METHOD:
1. Chop or shred the cabbage. Chop onion and green chillies.
3. Heat oil, and add mustard seeds.
4. When mustard seeds crackle, add green chillies and curry leaves. sauté.
5. Add chopped onion and salt. sauté for a few seconds.
6. Add washed and shredded cabbage. Mix well.
6. Cover and cook on a slow flame for 3-5 min.
7. Add grated coconut, stir well, cover and cook a 2-3 min.
8. Switch off the heat and serve hot.
