Vasilopita is a traditional cake made by all Greeks around the world to celebrate the new year. We hide a lucky coin inside, whoever gets the piece that contains the coin will have good luck for the rest of the new year! We say "kali hronia" meaning, "good year," to wish someone a happy new year.
Ingredients:
-2.5 teaspoons baking powder
-3.5 cups of flour, sifted
-1/4 Teaspoon of salt
-1/2 cup freshly squeezed orange juice (little less than 2 oranges)
-1 cup milk, room temperature
-250 ml unsalted, room temperature butter
-2 cups granulated sugar
-2 oranges, grated (about 1 tablespoon of rind)
-2 teaspoons of vanilla extract
-6 eggs, room temperature
-1/4 cup icing sugar for decorating, use a fine mesh strainer to shake on top after your cake has fully cooled
