Welcome back to What's for tea, and here's the eighth instalment of my festive food & drink ideas :)
Today I'm making good old cock-a-leekie soup! I always make a soup as an option on Christmas day....and this year, I think it'll be cock-a-leekie (chicken & leek)
It's really easy to make, can be made well in advance, freezes really well and quite cheap to make :)
Prunes can also be added to your bowl when serving....we don't like prunes, so I've not included them in this recipe :)

I Used-
A whole fresh free range chicken (About 2 lbs)
8 Fresh leeks (chut into chunks)
200g White long grain rice (washed)
3 Medium carrots (peeled & shredded/grated)
1 Teaspoon each of thyme & rosemary
OPTIONAL- 3-4 potatoes (peeled, washed & cut into chunks)
Salt & Pepper to taste
