No Vacuum Sealer? No Problem? I will show you in this tutorial how to use the water displacement method if you do not have a vacuum sealer. All you need is some zip lock bags and a container with water and you can remove the air out of the bags.
The Anova Immersion Circulator is the first Sous Vide cooker I purchased and I use it frequently to do steaks.
The thing you need to remember about how long to cook salmon in the sous vide cooker is that sous vide cooking time is determined by the thickness of the protein. The cooking time for sous vide is not determined by weight.
The best temperature to cook salmon is at 122F or 50 C. The salmon comes out tender and flaky. You can also cook it less or longer in the immersion circulator depending on what your temperature preference for salmon. Sous vide is a personal cooking technique just like others.
You should always sous vide the salmon with the skin on and the reason for that is the skin helps keep the salmon from falling apart.
Can you eat the salmon right out of the sous vide water bath? Yes you can, you can also cool it down and serve it cold over a salad.
You should sear the salmon when you are ready to serve it in order to create texture and get a good color. Remember that the fish is already cooked so you only need to sear it for a 2 minutes on each side so make sure your pan is really hot.
My last suggestion is that when you cook salmon it is much easier to cook in on a non stick pan or spray the fish with cooking spray like PAM.
