In today's video, join me as I explore the vibrant flavors of pomegranate in a variety of delightful recipes! Pomegranate seeds, with their rich red and pink hues, drop into the tray like precious gems. The sunlight filtering through the Kabolila tree adds an extra shine to these beautiful seeds.
➡️ Our trusty sour orange tree, which has been fruitful since my childhood, continues to bear an abundance of oranges. Combining the juice from these oranges with aloe vera gel and pomegranate juice, along with a touch of sugar and salt, creates a refreshing and calming drink that’s simply divine. For a savory treat, I marinated chicken legs with salt, pepper, and pomegranate syrup, and roasted them to perfection. The aroma was incredible, and they paired wonderfully with traditional tempered noodles made with carrot, leeks, and eggs, served alongside coconut milk curry.
Reminiscing about my school days, I decided to make meringue cookies, or “kisses,” just like I used to sneak into my school bag. Beating egg whites with sugar, vanilla essence, and lime juice until thick, I baked them and filled the centers with pieces of strawberries, black grapes, and pomegranate. These sweet treats are perfect for a chat with my father.
➡️ For evening tea, I prepared a sweet treat by frying string hoppers and drizzling them with caramel made from pomegranate syrup. I also boiled some dried pomegranate flowers. This unique twist on caramel, typically made with treacle, was a delightful change and paired perfectly with a hot cup of tea. Embrace nature, be good, do good, and enjoy life.
