2 cups flour
1 cup butter
1/3 cup sugar
2 tsp vanilla extract
2 cups pecans (chopped)
3/4 - 1 cup powdered sugar
Instructions:
1. Combine butter, sugar and vanilla until smooth
2. Add flour and mix
3. Add pecans and mix
4. Cover and refrigerate for a few hours (I refrigerate overnight)
5. Remove from fridge and shape into 1” balls and place on a lined cookie sheet
6. Bake for 12-15 minutes at 350F (until golden brown)
7. Let cool for 10 minutes
8. Roll balls in powdered sugar and place on a rack to cool
9. Store in an airtight container
Note: you can freeze these balls. I always dip them in powdered sugar again after they have thawed.
