George Mendes, Michelin-starred chef/owner of Aldea and author of the acclaimed cookbook, “My Portugal,” fell in love with cooking at a young age and knew that he would one day pursue a culinary career. Calling upon years of stages with some of the world’s most renowned chefs (David Bouley, Alain Passard, Alain Ducasse, Ferran Adria) as well as his own familial heritage, Mendes shares his inspiration for creating rustic yet refined Portuguese cuisine at his restaurant in the flatiron district of New York City.
