Our mango tree has been giving us so many mangoes. So we thought of doing this pickled mango recipe so we could enjoy them even if they are no longer in season.
1. Wash and peel mangoes
2. Slice them up
3. Mix water, vinegar and salt (brine)
4. Soak sliced mangoes in brine
5. Soak overnight
6. Rinse off brine
7. Boil Water and sugar until sugar is totally dissolved and let it cool
8. Arrange mangoes in clean bottle
9. Pour the sugar mixture (syrup)
10. Cover and store in fridge for 2-3 days. Then serve!
Good for at least a month!
