Instability is one of the 3 core ingredients of thunderstorm formation (along with moisture and lift). When you hear weather people (like us) talk instability, we are talking about the concept that warm air rises because it is less dense than cold air. So when the atmosphere is unstable, there is warm/moist air near the surface and cooler air aloft.
