Silky steamed eggs
Ingredients:
230 ml warm water
2 large eggs
1 scallion stack
1 teaspoon chicken powder
1 teaspoon oil
Salt, white pepper to taste ( I ran out of white pepper so had to use black pepper)
Soy sauce and sesame oil optional
Recipe:
Pour warm water (it's important for water to be warm, warm but bearable to touch!) into the beaten eggs, season with salt, pepper, chicken powder and mix.
Pour the mixture into bowls through a sieve.
Cover the bowls with plastic wrap and poke a venting hole to allow the steam to escape (this step it's optional, it just helps to get super smooth surface on top).
Steam for 8-10 minutes over a gentle heat (place the bowls in, when the water starts to boil).
Season with light soy sauce and sesame oil if desired,but it's optional. Even without it steamed eggs taste great.
Garnish with scallions and serve. Enjoy!
